Description - Description: Fish that is grown in recirculation systems (race) tends to accumulate ground taste molecules (Geosmine and 2-MIB) in the tissues. These ground taste molecules influence the taste of the fish and are not desirable. To reduce the concentr ation of these molecules in fish fillet, or eggs in the case of caviar production, the fish for consumption are 'swam'. During the swimming process, the fish are not fed, and the breeding water is constantly refreshed with water that is free from ground taste molecules.
